
You should use a bowl that is at least 6 inches tall. I'm not really sure if that's a law or what, I just do what I'm told. Anyways, I just used my kitchen aid bowl, that's my tallest one.
Add 3 cups of flour. I used 2 white and 1 wheat. I used our baby wheat grinder and actually groud the little what grains into flour. Also add 1 teaspoon of yeast, not active dry yeast, and 1 1/2 teaspoons of salt. Mix together.
Add 1 1/2 cups of water. Cold water works just fine, doesn't need to be hot. stir with a wooden spoon. Then afterwards scrape the edges of the bowl with a rubber spatula.
Cover the bowl with plastic wrap and let it rise for 10-16 hours. I know it's a long range, but if you start this at night, then it rises while you sleep.
I let this puppy rise for 11 hours I think, I normally let it go for 12 or more but the soup was getting close.
Sprinkle your counter with flour to prevent sticking. I gently scrap the sides of the bowl to get the dough out. Form the dough into a nice ball. Like so.
Tuck your dough in for another nice nap. This time another 90 minutes. Make sure you at least read it a bed time story. When it's been sleeping for 60 minutes preheat the oven to 450 and put your dish in the oven to heat. I used our stoneware pyrex bowl. Make sure it's got a lid.
